PPQ: Pralines

This week's Project Pastry Queen was picked by Shawnda of Confections of a Foodie Bride. When I was in New Orleans a month ago, I had pralines for the first time, and they were fantastic. These reminded me of them...except that I got distracted during the last step and kind of ruined them. I hate it when that happens.

Pralines are very easy to make. You cook sugar and some other ingredients until it gets to the soft ball stage, and then the recipe says to mix it with a wooden spoon for 10 minutes. I really did not want to do that, so I used my mixer. While it was mixing, I was doing dishes, and I accidentally beat the heck out of it. It should be soft and smooth--almost caramely. Mine turned back into a soft sugar. I formed some of them into balls, and the rest of them became sugar-coated pecans. This is perfect for me because I can use those on salads this week.

I think pralines would make a great gift, so I'll probably make these again during the holidays. But this time I'll pay attention! Check out Shawnda's blog to get the recipe, and be sure to go to the Project Pastry Queen website to see everyone else's take on the recipe.

I use to live in Colorado Springs and I remember how I had to adjust recipes. I don't miss it but I sure miss the mountains!

Funny, I just made a big batch of pralines that I sent to my grandmother for Mother's Day (she grew up in Mississippi, just a stones throw from New Orleans). They do go from the perfect temperature for spooning out to too cool in no time at all! You definitely have to work fast and watch them. I'm sure they were still delicious, though!

Kind of embarrassing... but on one of my favorite movies, Where The Heart Is, Ashley Judd's character has a daughter named Praline and I knew it was a snack/dessert but I had no idea what it was! I'm happy to see an image to the name.

Fascinating. I see pralines in everything here and I always wondered how to make them. I'm off pastries for a few weeks, but when I jump back on the wagon, I think I'll have to try these.
