Homemade Chocolate Syrup

When I was in college, I would eat a bowl of vanilla bean ice cream topped with chocolate syrup, sprinkles, and marshmallows almost every night. And by night, I mean about 10 pm. Ah the good ol' days when my metabolism rocked. Now, not so much. I wouldn't eat anything at 10 pm let alone a big bowl of ice cream. However, this chocolate syrup definitely tempts me into doing that. Or at least eating dessert when I get home from work.  

This recipe has been going around the blogging world for awhile, and most people love it in their chocolate milk. However, I was always a Nesquik kind of girl. Give me the powdered stuff any day. I did try this in my milk one day, and it's good. I probably will start using this instead, especially considering that my container of Nesquik is about 4 years old. That may be a slight exaggeration but just slight. Yikes!

This syrup is really easy to make (about 15 minutes), and it's a great option to that other syrup out there. At least you know everything that's in it!

Homemade Chocolate Syrup
Print this recipe

1 1/4 cup sugar
1 cup cocoa powder, unsweetened
1 cup water
1/4 teaspoon salt
2 teaspoons vanilla extract

In a saucepan, whisk together the sugar and cocoa until combined. Add in the water and salt, and bring to a boil over medium high heat. Reduce heat to medium low and boil until thickened slightly, about 5 minutes, while stirring. Remove from heat, let stand for 5 minutes, add vanilla, and cool. Store in the refrigerator.

Yum! I never thought to make my own syrup before, this looks delicious !! I miss the days of being able to eat ice cream at 10pm too :(

I make this stuff for boyfriend all the time--he loves chocolate syrup, and I don't mind giving it to him when it's homemade :)

I love this! I'm the kind of person who can take a thing of chocolate syrup and just chug it. Gross? Nah. I love me some chocolate!

Ugh! How I miss my college metabolism. I was just remembering the other day how I used to eat Girl Scout cookies by the sleeve with my roommates. No longer. Looks like I'll have to enjoy this chocolate sauce in moderation...and well before 10. The joys of adulthood. :)

Is this adjusted for high altitude? We moved to 7500 ft from sea level, and I've had the hardest time making my mom's chocolate syrup recipe work out. It never thickens, it seems. Her recipe is very similar to this, but uses butter and milk instead of water. :-)

This isn't adjusted, and I haven't had any problems with it. You could try to decrease the amount of liquid in your mom's recipe and see if that does anything....good luck!

    Cooking is fun and easy at high altitude, but baking can be frustrating. About 90% of my recipes work everywhere, but some are adjusted so us mountain dwellers can enjoy baked goods from scratch. I hope you find great recipes on here for your family, and I'll let you know if any are adjusted for high altitude.
