Have you ever had dulce de leche? It's an amazing caramel, and it turns out that it's very easy to make at home. Score. I also make my own caramel, but it's kind of a pain. And, without fail, when I add cream to that cooked sugar, it seizes up and annoys me. So imagine my great pleasure when I took out a can of sweetened condensed milk, opened the lid a tiny bit, set it in a pot of water, and let it boil for three hours. That's it. It's almost too easy. I see a lot of this in my future. If you're thinking of Mother's day gifts, I can't see why any mom wouldn't like to receive a jar of this, homemade from her loving child. What could be better?

As you can see from the picture, this is fantastic with fruit and chocolate. I put it in some whipped cream (yum!), and it would be delicious with ice cream, in frosting, in a cupcake, brownies...see the endless possibilities? I'm off to make another batch!

Homemade Dulce de Leche

Makes about 1 1/2 cups

1 can sweetened condensed milk, label removed

If your can of sweetened condensed milk (not evaporated milk!) has a tab, pop that just a bit. If it doesn't, use your can opener to puncture the top of the can twice. If you don't give a spot for the pressure to release, it could explode. Not cool.

Place the slightly opened can in a medium saucepan, top side up, and fill with water so that it's covered 3/4 of the way. Bring to a boil, reduce to a simmer, and cook for three hours. Check back every 30 minutes, and if the water is lower than half the can's height, add more. A little of the milk will seep out, but you'll only lose a couple of tablespoons. After three hours, carefully remove the can from the pan with tongs or a pot holder and let cool. Open, stir, and store any leftovers in a sealed container in the refrigerator.

I love this and need to try it soon. I have a thing for just plain sweetened condensed milk. Every time I use it in a recipe I always find myself sneaking a spoon or two. This is so easy too. :)

I always wanted to try making dulce de leche, but I got scared away by the possibility of explosion. Making a whole in the can sounds like a simple solution, though. I must try it!

I haven't made this yet - for good reason! I would spoon myself into a sugar coma! This stuff is fantastic.

I made this once years ago. I just left the can to boil under water. I don't remember for how long. I am going to try this.
